soup’s on…

dang it’s cold! so i made soup last night, and i’m sharing the recipe cause it was so good and healthy and cheap to make…

this soup is crazy awesome good and healthy for you. don’t be put off by its sort of baby food-esq appearance. it rules!
 
also, i don’t measure, so if you’re one of those people that cooks and needs measurements, i’m sorry for you. just feel it. use what you have. don’t buy extra stuff.
 
what i had in the fridge last night soup:
 
1 yellow smelly onion, chopped roughly
6 old skinny carrots (gross outer layer, peeled off!)
3 small sweet potatoes (peels off!)
2 pieces leftover squash & zucchini
4 garlic cloves, chopped real teeny
a ton of kale
some veggie broth
water
 
 
get out your stock pot. make sure there’s no cat hair, or leftover food chunks from when your boyfriend “washed it” last time. put it on the stove and crank that heat. add about 3 cereal spoons of veggie broth. throw in that garlic, minced up. next add the chopped onion & those tiny pieces of leftover veggies you always seem to end up with. in my case last night it was the squash. cut the sweet potatoes and carrots in small chunks, then add those in. stir it up real good. by this time, the bottom layer is probably sticking to the pan and getting all brown and gooey. this is a good thing. add whatever veggie broth you have (i had about 3 cups worth) then add a couple more cups of water. add kale and stir again. spice it up with red pepper flakes, cumin, ginger, kosher salt and fresh ground pepper. put a lid on it, to lock in the healthiness.
let it cook on med-high heat for about 15-18 minutes. in my case it was the length of a cigarette smoke, and an episode of squidbillies. come back, check the sweet potatoes to see if they’re tender. if they’re mush in your mouth, turn the heat off, and blend/puree it completely with your immersion blender. but don’t be clumsy like me and let it come up above the liquid line cause then you’ll spew hot molten lava soup on you, your kitchen, and your innocent cat, who’s up on the bar stool watching you cook like it’s iron chef kitchen stadium challenge. if it’s too thick add water, too thin? well you already added plenty of water now, next time you won’t be so heavy handed. live and learn!
 
serve that shit up, make some sides, i don’t care… whatever you want…

super shoppin!

people who say its more expensive to eat vegan/vegetarian/healthy need to retire that tired excuse and come shopping with me! :) Dave and I just had another cheap and successful grocery store trip, all vegan stuff for about 2 and a half weeks worth of food/meals for under 100 bucks. 90% organic! next month were gonna try to be GMO free. this one will be harder, but we’re gonna try… next time if I get my shit together, I’ll post our grocery list and menu… this can be done people, even on a small budget!

I recently watched the movie Food Stamped, which is a great eye opening documentary that really breaks down what the average family on food stamps has to live on. it made us both re evaluate what we spend on our food and it’s a really great challenge to try and do. of course for us, it’s a fun challenge and goal, not a necessity like for so many families in America. be grateful for what you got, y’all. and don’t think you can’t eat great food on a tight budget! watch those sales, coupon, and cook at home…
